The dried lemon and orange peel in the rub give the chicken a bit of a crust. The mustard and chipotle pepper give it a distinct flavor. The crusty chicken is reminiscent of shake and bake chicken, but so much better.
Make Bill’s Not-So-Secret BBQ Rub
4 Boneless, Skinless Chicken Breasts (or as many as you need)
Extra-Virgin Olive Oil
Rinse chicken breasts in cold water. Pat dry with paper towels. Lightly brush olive oil on chicken breasts. Coat chicken breasts liberally with Bill’s Not-So-Secret BBQ Rub.
Grill over medium-high direct heat 8-12 minutes, turning halfway through cooking time. Serve with your favorite side dishes.
