This is a change of pace from the typical vegetable side dishes, such as corn, green beans, and, my family’s favorite, asparagus. Mix in some broccoflower for extra color. Most people think that few vegetables can be cooked on the grill. This vegetable dish shows them differently. It’s delicious; give it a try.


Cauliflower & Red Onion Curry
For the Sauce:
2 Tablespoons Unsalted Butter
2 Tablespoons All-Purpose Flour
2 Teaspoons Minced Garlic
2 Teaspoons Minced Fresh Ginger
2 Teaspoons Ground Cumin
½ Teaspoon Kosher Salt
¼ Teaspoon Fresh Ground Pepper
1 Cup Apple Juice
1 Tablespoon Fresh Lemon Juice
1/3 Cup Raisins
¼ Cup Heavy Cream

1¼ Pounds Cauliflower Florets
1 Large Red Onion, Cut Crosswise into ½" slices
Vegetable Oil
Kosher Salt
Fresh Ground Black Pepper

Brush or spray the cauliflower and onion with vegetable oil. Grill the cauliflower over direct medium heat until evenly browned, 12 to 16 minutes, turning three times during the grilling time. Grill the onion over direct medium heat until tender, 10 to 12 minutes, turning once during the grilling time. Cut the vegetables into bite-sized pieces. Set aside.

To Make the Sauce:
In a large saucepan, combine the butter, flour, curry powder, garlic, ginger, cumin, salt and pepper. Blend well and cook over medium heat for 2 minutes. Add the apple juice and lemon juice. Raise heat to high and whisk the mixture as it comes to a boil. Lower heat and simmer 3 to 4 minutes. Add the cauliflower, onions, raisins and cream. Cook over medium heat, stirring occasionally, until the cauliflower is tender, 3 to 5 minutes. Season with salt and pepper. Serve warm.

Makes 4 Servings.

Total Cooking Time: Approximately 20 Minutes.
